Who buys
Cloud kitchen customers order from home or the office, usually at lunch or late evening, and they browse by cuisine and delivery time inside the app. On the aggregator, they are the app's customer: the kitchen sees an order, not a phone number it can use. The customers worth moving are the ones who already order the same dish every week. They trust the food, and a small reason to order directly, such as a combo that exists only there or a faster reply on WhatsApp, is often enough.
What a good month looks like
In a good month, the kitchen knows how many orders came through each app and how many came directly, what each channel kept after commission and discounts, and which dishes bring people back. Every delivery bag carries a clear way to order directly next time. Direct customers who ordered twice are thanked and asked for a review. The two channels that matter
